Sweet Tomato Basil Sauce

The light and perfect flavors of sun ripened tomatoes and fresh basil are all that hit your tongue when you make this sauce. Please don't sub the butter in the recipe, it adds a sweetness and mouth feel that nothing else can match. I puree the sauce before adding the chopped basil because my family doesn't like the big pieces of onion, but it is completely up to you.

Bruschetta Steak Salad

Salad Days go on... This one is one of my favorites.

Bruschetta Steak Salad
Salad Assembly:
Place 2 cups romaine, 1 cup bruschetta, a sprinkling of sliced onion, 2 tablespoons shredded parmesan, and 1/4 pound of grilled sliced flank steak in a bowl with 2-3 tablespoons of dressing and toss. Serve with some crusty Ciabatta drizzled with the dressing as well!

Mint Julep Cupcakes

Gasp! A second post in one day!
In honor of the 139th Kentucky Derby (and the fact that I am a kitchen supervisor at a race track) I made just shy of 300 mint julep cupcakes. All day I heard people say how much they disliked the Mint Julep, a traditional drink served at the Kentucky Derby consisting of bourbon and mint over ice. Churchill Downs serves them in silver julep cups. Not to toot my own horn, but everyone loved the cupcakes.
